Ingredients

Scale
  • 4 Cups potatoes, diced
  • 1 Cup Cottage Cheese, blended
  • 1/2 Cup mayonnaise
  • 1 T fresh dill, chopped
  • 1 1/2 t garlic powder
  • 1 1/2 t onion powder
  • 1 1/2 t salt
  • 1/2 t pepper
  • 2 eggs
  • 1 1/4 c shredded cheddar cheese
  • 1 1/4 c bacon, cooked and chopped
  • 1/4 green onions, chopped

Instructions

  1. Dice potatoes and add to a large pot, cover potatoes with water, cook on high heat and bring to a boil. Once potatoes are boiling reduce to medium heat and cook for 12-15 minutes. 
  2. Add water to a small pan and bring to a boil. Place the 2 eggs in the pan and boil for 10 minutes. 
  3. Drain potatoes and add to a large bowl. Set them aside to cool.
  4. In a large pan cook the bacon until crispy. Remove the bacon from the pan and place on a paper towel. Cut bacon into small pieces after it has cooled down.
  5. In a small bowl add all of the seasoning together and stir to combine.
  6. In a medium sized bowl add the mayonnaise, blended cottage cheese and seasoning blend. Stir together. 
  7. Add the dressing blend to the diced potatoes. Mix gently so you don’t mash the potatoes. 
  8. Chop the hard-boiled eggs and the green onion. 
  9. Add 1 cup of the cheddar cheese, 1 cup of bacon, 1/2 of the green onions and all of the chopped eggs to the potato salad. Stir gently. Save the remaining cheese, bacon and green onions to sprinkle on the top before serving.
