Ingredients

Cinnamon Roll Dough 
1 1/2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
pinch of salt
1 1/2 cup whipped cottage cheese

Cinnamon Filling
½ cup butter, softened but not melted
½ cup brown sugar
2 Tablespoon cinnamon
⅛ teaspoon sea salt

Frosting
3 cups whipped cottage cheese
1/4 cup – 1/2 cup of powdered sugar
1 teaspoon vanilla extract

Instructions

Cinnamon Filling:
1. To make the cinnamon filling, combine all filling ingredients to a medium bowl and mix to combine.

1. To make the frosting, combine all frosting ingredients to a medium bowl and mix to combine.

Cinnamon Rolls:

  1. Preheat oven to 400º. Lightly grease a 8″ baking dish
  2. Add cottage cheese to your food processor and blend until smooth. (You can add whipped cottage cheese if you have some on hand!) Add all of the remaining dough ingredients and pulse until combined. This makes a very sticky dough, but trust the process.
  3. Lightly flour a piece of parchment paper. Lay the dough on the floured surface and knead for about 30 seconds, adding flour until it is workable.
  4. Roll dough out to form a large rectangle, about 1/2 inch thick.
  5. Spread cinnamon filling evenly over the dough.
  6. Starting from one side, begin to gently roll it up, keeping it snug. Evenly cut the log into individual rolls and place them into the prepared pan.
  7. Bake 18-20 minutes, until the tops are starting to turn golden brown. Remove and allow to cool, then ice and enjoy!
