Ingredients

1 1/2 cups whipped cottage cheese
1 cup whole milk
3 Tablespoons melted butter
1/2 cup parmesan cheese
1/2 teaspoon sea salt

3 cups chicken broth
116oz. package uncooked penne pasta
2 cups cooked chicken, diced
fresh parsley for garnish

Instructions

  1. Preheat oven to 400º.
  2. In a food processor, whip cottage cheese until smooth. Add milk, melted butter, parmesan cheese, salt, pepper, and garlic powder.
  3. In a large bowl, combine alfredo mixture from the food processor and chicken broth. Whisk until smooth.
  4. Lightly grease a 4 quart baking dish. Add uncooked pasta and cooked chicken. Pour in the alfredo mixture. Top with mozzarella.
  5. Cover the dish with foil and bake 30 minutes. Remove it from the oven, then carefully remove the foil. Stir the pasta and check for doneness. *Depending on your oven, it may take 10-20 minutes longer.
