This Cottage Cheese Fruit Pizza recipe features a soft, high-protein sugar cookie crust and creamy whipped cottage cheese frosting, topped with fresh fruit. Light, colorful, and perfect for brunch or a better-for-you dessert!

Sugar Cookie Crust

  • 11/2 Cups sugar
  • 1 Cup butter (softened)
  • 1 Cup whipped cottage cheese
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 41/2 Cups of flour

Cottage Cheese Frosting

  • 1 Cup whipped cottage cheese
  • 1 Cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Cottage Cheese Sugar Cookie Crust

  1. Preheat oven to 350º
  2. In a large bowl, cream the sugar, butter, whipped cottage cheese, egg and vanilla until smooth.
  3. Add to the bowl the baking soda, salt and flour. Mix until well combined.
  4. Transfer dough to a floured surface.
  5. Roll the dough out to 1/2 inch thick.
  6. Bake for 8-10 minutes until the edges are a golden brown. 
  7. After the pizza is completely cooled, spread frosting and top with fruit of your choice.

Cottage Cheese Frosting

1. Add cottage cheese, powdered sugar, and vanilla extract to a medium bowl. Stir together until smooth.
