This cottage cheese pumpkin alfredo is loaded with protein and fall flavor. It comes together in under 30 minutes!

Ingredients

  • 1/2 box of fettuccine or pasta of choice

  • 1/3 cup reserved pasta water

  • 2 1/2 cups cottage cheese

  • 1 cup pumpkin puree
  • 3/4 cup grated parmesan cheese 

  • 2-3 cloves garlic

  • 1 Tbsp. olive oil

  • 1 tsp. salt

  • 1/2 tsp. black pepper

Instructions

  1.  Bring water to boil in a large pot for your pasta. Be sure to salt the water and add a about ½ teaspoon of olive oil to keep the pasta from sticking. Cook pasta according to package instructions. After the pasta is al dente, save ⅓ cup of pasta water for the sauce and drain the rest. 
  2. Add cottage cheese, pumpkin puree, parmesan, garlic, olive oil, salt, and pepper to a food processor. Blend until the sauce is smooth. 
  3. Pour the sauce into a large sauce pan and heat to low-medium. Add the pasta water that you saved earlier and mix it in. Stir constantly to warm the sauce, being careful not to scorch it or let it boil.
  4. Add your cooked pasta to the sauce and toss gently to make sure it’s all completely coated in the sauce.
  5. Serve and enjoy!
