Ingredients

Scale
  • 1 1/2 pounds of skinless boneless chicken breasts
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 (15 oz) cans of white beans (great northern or cannellini) drained and rinsed
  • 1 cup corn
  • 1 (4 oz) can diced green chilis
  • 4 cups chicken broth
  • 1 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1/4 tsp cayenne
  • salt and pepper to taste
  • 1 cup cottage cheese (whipped)
  • fresh cilantro, lime for serving

Instructions

  1. Load the crockpot. Place the chicken breasts in the bottom of your slow cooker. Add the onion, garlic, beans, corn, green chilis, chicken broth, and spices.
  2. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and shreds easily.
  3. Remove the chicken to a cutting board, shred with two forks, and return it to the slow cooker.
  4. Right before serving, stir in the cottage cheese. Stir until heated through.
  5. Add lime juice, taste and adjust seasoning as needed.
