This Cottage Cheese Zucchini Bread is a more wholesome take on a familiar favorite. It’s a great way to sneak in a little extra protein for a snack or breakfast.

Ingredients

1/3 cup olive oil
1/2 cup maple syrup
1 large egg
1/2 cup cottage cheese
2 tsp vanilla
1 1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup shredded zucchini

Instructions

  1. Preheat oven to 350. Grease 9″x 5″  loaf pan.
  2. Whisk oil, syrup, egg, cottage cheese and vanilla together. Set aside. 
  3. In a separate bowl whisk flour, baking powder, baking soda, salt and cinnamon. 
  4. Pour wet ingredients into dry ingredients and mix well.
  5. Remove some of the excess liquid from zucchini with a paper towel.
  6. Fold the zucchini in batter mix.
  7. Pour into loaf pan. Bake for 40-45 minutes
