These Cottage Cheese Sugar Cookies are soft, buttery, and easy to roll out or press and bake. The cottage cheese adds moisture and makes the dough super workable – with the perfect chewy center every time.

Ingredients

  • 1 1/2 Cups sugar
  • 1 Cup butter (softened)
  • 1 Cup whipped cottage cheese
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 1/2 Cups of flour

Instructions

  1. Preheat oven to 350º
  2. In a large bowl, cream the sugar, butter, whipped cottage cheese, egg and vanilla until smooth.
  3. Add baking soda, salt and flour. Mix until well combined.
  4. Use a small cookie scoop to portion out equal amounts of dough, then roll them into smooth balls. Use the bottom of a jar or cup to press them down – about 1/2″ thick.
  5. Bake for 7-8 minutes until the edges are golden brown.
  6. Place the cookies on a cooling rack. Allow them to fully cool before frosting them!

Notes

You can also roll this dough out and use cookie cutters. Just add the dough to a floured surface and roll it out to 1/2″ thick, then use cookie cutters of your choice.
