These Cottage Cheese Pumpkin Streusel Muffins are the ultimate pumpkin spice fall treat. Moist, fluffy, and packed with protein, these muffins are perfect for starting your day. The irresistible streusel topping adds the perfect crunch.

Pumpkin Muffin Batter

  • 1 + 3/4 cup all purpose flour
  • 1/4 cup ground flax
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt 
  • 1 1/2 tsp cinnamon
  • 2/3 cup brown sugar, packed
  • 1/4 tsp nutmeg
  • 2/3 cup blended cottage cheese
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 tsp vanilla

Streusel Topping

  • 1/4 cup of melted butter
  • 1/2 cup brown sugar- packed
  • 1/4 cup of old fashioned oats
  • 1/4 cup flour
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 375 F. Spray muffin pan with cooking spray. Set aside.
  2. In a large bowl, combine the flour, ground flax, baking powder, baking soda, and salt. 
  3. In a separate bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, blended cottage cheese, eggs, and vanilla. Mix well. 
  4. Add the wet ingredients into the bowl of dry ingredients and hand-mix until well combined. Do not over blend. 
  5. Scoop batter into prepared muffin tins, filling about 2/3 of the way. Set aside.
  6. For the streusel, combine all the streusel ingredients in a bowl. Use your hands or a pastry cutter to mix it until it’s crumbly and “sandy.” 
  7. Sprinkle the streusel over the muffin batter, dividing evenly over the 12 muffins.
  8. Bake for 15 minutes at 375.
