Ingredients
- 1/2 pound penne pasta
- 1 T olive oil
- 1 pound Italian sausage (casings removed)
- 1 medium onion (chopped)
- 3 garlic cloves (minced)
- 1/2 t nutmeg
- 1/4 t cinnamon
- 1 bay leaf
- 1/2 t oregano
- 1/2 t salt
- 1/2 t pepper
- 1 cup of white wine
- 1 cup of chicken broth
- 1 cup canned pumpkin
- 1/2 cup of whipped cottage cheese
- 1 cup grated Parmesan cheese
Instructions
- Cook pasta according to package instructions and set aside.
- In a large skillet, heat the olive oil and cook the sausage while breaking it into smaller pieces. (drain sausage if there is an excessive amount of fat)
- Add the chopped onion and garlic to sausage and cook for 5 minutes.
- Add the cinnamon, nutmeg, bay leaf, oregano, salt, pepper and wine to the skillet. Cook until wine is reduced by half. Add chicken broth, pumpkin and whipped cottage cheese. Stir to combine. Let this simmer for about 5 minutes until it thickens a bit.
- Incorporate cooked pasta into the sauce and cook over low heat for a few minutes.
- Stir in parmesan cheese and serve.
