Cottage Cheese Mashed Potatoes

This cottage cheese mashed potatoes recipe adds a hint of protein to a familiar side dish and creates the creamiest consistency. These will be a hit for any holiday meal!

Ingredients

3 cups gold potatoes, cubed
3 cups cauliflower florets
1/2 cup blended cottage cheese
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Instructions

  1. Prepare potatoes and cauliflower. Peel potatoes and cut into 1/2″ cubes. Chop cauliflower into small florets, approximately bite-sized. 
  2. Add potatoes and cauliflower to a medium pot of water. Bring to a boil. Cook for 20-30 minutes until potatoes are fork tender. Carefully drain the hot water.
  3. Add cottage cheese, salt, and pepper to the pot and mash or blend. We’ve used both a potato masher and an immersion blender. If using an immersion blender, food processor, or blender
  4. Serve and enjoy!

Notes

If using an immersion blender, food processor, or blender, be careful not to over-mix. As with any mashed potatoes, the consistency can get “pasty” or “gluey” if they’re over-worked.
