This cottage cheese marry me chicken recipe is a lighter take on the popular classic. It’s still quick and easy to make, tastes fancy, and is loaded with protein.

Ingredients

  • 4 chicken breasts, sliced into cutlets (boneless, skinless)
  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 34 garlic cloves, minced
  • 1/2 tsp. chili flakes
  • 1/2 tsp. oregano
  • 1/2 tsp. thyme
  • 1 cup chicken broth
  • 1 cup whipped cottage cheese
  • 1/2 cup grated parmesan cheese
  • 1/3 cup chopped sun-dried tomatoes 
  • fresh basil

Instructions

  1. In a large skillet, heat olive oil and butter on medium heat. Season chicken with salt and pepper. 
  2. Cook the chicken for 5 minutes on each side until golden brown and cooked through. Set the chicken  aside on a plate and cover. 
  3. Sauté the garlic, pepper flakes, oregano and thyme for a minute until fragrant. Add the chicken broth to deglaze the pan, scraping the bits stuck to the bottom of the pan. 
  4. Turn heat down to medium-low, add the whipped cottage cheese and the parmesan cheese. Allow the sauce to simmer for a few minutes, stirring occasionally to combine all the ingredients. 
  5. Add in the sun-dried tomatoes then return chicken breasts to the sauce. Simmer and allow it to thicken for 4-5 minutes. 
  6. Garnish with fresh basil.
  7. Serve over pasta of choice.
