4 chicken breasts, sliced into cutlets (boneless, skinless)
In a large skillet, heat olive oil and butter on medium heat. Season chicken with salt and pepper.
Cook the chicken for 5 minutes on each side until golden brown and cooked through. Set the chicken aside on a plate and cover.
Sauté the garlic, pepper flakes, oregano and thyme for a minute until fragrant. Add the chicken broth to deglaze the pan, scraping the bits stuck to the bottom of the pan.
Turn heat down to medium-low, add the whipped cottage cheese and the parmesan cheese. Allow the sauce to simmer for a few minutes, stirring occasionally to combine all the ingredients.
Add in the sun-dried tomatoes then return chicken breasts to the sauce. Simmer and allow it to thicken for 4-5 minutes.
