1 Tbsp. olive oil
1 Tbsp. butter 
1 medium onion
1 tsp. fresh or ground ginger
3 cloves garlic, minced
1.5 lbs boneless chicken thighs, sliced into 1-inch chunks
1/4 cup tomato paste
1 Tbsp. garam masala
1 tsp. chili powder
1 tsp. cumin
1 tsp. sea salt
1/2 tsp. black pepper
1 cup whipped cottage cheese

Instructions

  1. Bring a large skillet to medium-high heat and add olive oil and butter. Add onions and sauté until they start to brown slightly – about 3-5 minutes. Add ginger and garlic, stir constantly for around 1 minute.
  2. Add chicken thighs, tomato paste, and remaining seasonings. Cook over medium for 7-8 minutes, making sure to thoroughly coat the chicken in the mixture.
  3. Add the whipped cottage cheese to the pan and stir to combine. Lower the heat to a simmer and stir occasionally for 5 minutes.
  4. Serve up your cottage cheese butter chicken over fresh rice or with naan!
