This cottage cheese bread is soft, high-protein, and easy to make. Perfect for toast or sandwiches — no yeast, no fuss, just a seriously good loaf.

Ingredients

  • 1 cup of cottage cheese (whipped)
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup olive oil
  • 1 T honey
  • 2 cups of flour
  • 1 T baking powder
  • 1/2 t baking soda
  • 1/2 t salt

Instructions

  1. Preheat oven to 350º. Grease a standard loaf pan.
  2.  In a large bowl, whisk together the cottage cheese, eggs, milk, oil and honey until smooth. 
  3. In a separate bowl, stir together the flour, baking powder, baking soda, and salt. 
  4. Add the dry ingredients to the wet mixture and stir until well combined but don’t over mix. Batter should be thick but scoopable. 
  5. Pour into the prepared loaf pan and smooth the top with a spatula. Bake for 25 minutes, or until golden brown and a toothpick comes out clean. 
  6. Let cool in the pan for 5 minutes, then transfer to a wire rack.
