This cottage cheese protein bark is an easy-to-make snack that sneaks some protein into your day. It tastes like white chocolate and berries!
1. Whip the cottage cheese until completely smooth. Then add syrup and vanilla and blend.
2. Line a large baking sheet with parchment paper then pour cottage cheese blend on sheet and spread evenly with spatula til about 1/4 inch thick.
3. Top with blueberries and raspberries.
4. Freeze for 3-4 hours. Slice with a knife or break into the size of snacks you prefer. Store in an airtight container in the freezer!
Be creative and add other toppings! Strawberries, kiwis, chocolate chips, shredded coconut etc.
* How to make whipped cottage cheese: we’ve found that a food processor works best. It’s the most effective way to get a smooth, silky texture. Buzz the processor for a few seconds, scrape down the sides of the processor bowl, and repeat until no more curds remain.
