Cottage Cheese Berry Bark

Cottage cheese protein bark, loaded with berries.

This cottage cheese protein bark is an easy-to-make snack that sneaks some protein into your day. It tastes like white chocolate and berries!

Ingredients

Scale
  • 2 1/2 cups blended cottage cheese
  • 1/4 cup maple syrup
  • 1 t vanilla
  • 1 cup blueberrries
  • 1 cup raspberries

Instructions

1. Blend the cottage cheese, syrup and vanilla in a blender or food processor.

2. Line a large baking sheet with parchment paper then pour cottage cheese blend on sheet and spread evenly with spatula til about 1/4 inch thick.

3. Top with blueberries and raspberries.

4. Freeze for 3-4 hours. Slice with a knife or break into the size of snacks you prefer. Store in an airtight container in the freezer!  

Notes

Be creative and add other toppings! Strawberries, kiwis, chocolate chips, shredded coconut etc.
