Cottage Cheese Mac and Cheese

This cottage cheese mac and cheese recipe is about to change the mac and cheese game forever. Creamy, cheesy, and silky smooth with 30 grams of protein per serving!

Ingredients

  • 3 cups elbow protein pasta
  • 1/4 cup butter
  • 1/4 cup flour
  • 24 oz. whipped cottage cheese
  • 1/2 t salt
  • 2 cups freshly grated cheddar cheese
  • 1/2 cup of grated parmesan cheese

Instructions

  1. Cook pasta according to package instructions.
  2. While pasta is cooking, in another pot, melt butter on medium heat. Add flour to melted butter and stir until incorporated and starts to thicken. 
  3. Slowly add in the whipped cottage cheese. Stirring constantly until it simmers.
  4. Remove from heat and stir in shredded cheddar and parmesan cheese. Stir until cheese is completely melted. 
  5. Add salt to taste.
